“This is a simple dish that goes good with a variety of sides. While yes, this dish is composed of all 3 macros (if that is your thing), it needs more carbs. I personally like to serve it with one of the winter squashes (acorn, kabocha, or butternut) but a simple sweet potato could do the trick.” —Karen Pierce.
Ingredients 3 Boneless Chicken Breast
6 Strips of un-cooked bacon (nitrate & nitrite free)
3 Cups of spinach
1 Cup sliced cherry tomatoes
6 Toothpicks Directions
1. Place 2 slices of bacon horizontal about a half inch apart.
2. Place 1 chicken breast on top of the bacon.
3. Cut a deep slit in the chicken, creating a “pocket”.
4. Stuff one cup of spinach in the pocket.
5. Add as many sliced cherry tomatoes as your heart desires….or will fit.
6. Wrap bacon slices around stuffed chicken and secure with toothpick.
7. Place on sprayed pan in oven at 400 Degrees for 30-40mins
“Nice-Cream is perfect for anyone with a dairy allergy or just looking to stay close to “real food”. I like to have this in the evenings after dinner when I want something sweet. You can make this as extreme or as simple as you want. Its also fun to have kids help too. They can add in their own “toppings”. -Karen Pierce.
For this recipe, take into consideration the flexibility when it comes to ingredients and amounts. For larger portions, use more bananas & toppings. For smaller, do the opposite. (You get the idea.)
Ingredients:
1 Large Banana
Extra: For added flavor, blend in your favorite healthy snacks— such as almonds, cocoa powder, dried fruit, etc. Be creative!
Directions:
Chop up banana & freeze until hard (best to leave it in the freezer overnight).
Combine frozen banana and extra toppings in blender, and blend until smooth.

(For example, when my parents come to help me do BIG projects I make this and put out forks and everyone picks on it through out the morning, till we break for lunch). It also can be made ahead of time and pop it in the freezer till needed. When meal prepping I can make this then put in individual containers to have every morning while on the go. Ingredients:
3 Large Sweet Potatoes
1/2 Lb. Ground Sausage
3 Large Sausage Links
12 Eggs
Directions:
Bake sweet potatoes until soft.
Remove skin, cut into 0.5 inch slices, and layer in the bottom of the baking pan.
Brown the ground sausage in frying pan. Pour over sweet potatoes.
Chop sausage links into bite-sized pieces. Layer over ground sausage in baking pan.
Using all 12 eggs, separate the egg yolks from the whites. Put the yolks aside.
Whip the egg whites until frothy, and pour over the ingredients in the baking pan.
Carefully spoon the egg yolks onto the egg whites in the baking pan.
Bake at 400 degrees for 25-35 minutes (depending on how you like your eggs).
I am in the process of attempting to eliminating as much “chemicals” as I can from my daily life. Hints why I gave this a try…along with a few other things (laundry detergent, surface cleaner, end dust, plastic containers, etc.)
Ingredients
3 tablespoons coconut oil
3 tablespoons baking soda
1 tablespoon aloe vera gel (optional)
6 drops lemon essential oil
6 drops onguard essential oil
*1 teaspoon activated charcoal
* can add in a little stevia or xylitol
Directions
Mix coconut oil and baking soda together in a small container.
Add in aloe vera and activated charcoal if using.
Stir in essential oils.
*Can use any essential oils you prefer. 10 – 15 drops.
Use just a small amount daily to brush teeth.
Store in glass container.
Dip toothbrush into paste and brush teeth like normal.
My Experience/Suggestions:
Mix in a large bowl then transfer to the small cute mason jar (found at craft stores)
I would make again BUT leave out the “activated charcoal” if you are going to use this at your sink vs the shower where I use mine. That black stuff gets EVERY WHERE when you brush your teeth.
I didn’t use “onguard” oil. I couldn’t find it…not even on Amazon.
Long overdue BUT one of the hardest things about cancer is the medical billing system and if you are not careful and don’t have a system in place you could end up in a bad way.
