3 Sundays ago I went hiking at Pedernales for my first time. I had never been here before, but quickly fell in love! This place just 45mins out of town was the PERFECT escape on that beautiful day! I volunteered to be in charge of food because I wanted to make sure I had paleo options. I went to the store that morning and grabbed a few things for an ice chest and the backpack that was to be carried. My groceries included:
Grapes
Apples
Train Mix
Turkey Slices
Avacado
BaconHummus
Bell Peppers (all colors)
Lettuce
Water
Almond Butter

As soon as I got home I made some lettuce wraps which included bacon, avacado and turkey all wrapped in a lettuce leaf which was then wrapped in foil. This was my “sandwhich”. I sliced the peppers so I could dip them in the hummus. I put the trailmix, apples, grapes and water in the backpack for the day hike. This was PERFECT because they were available when needed. After a few hours of hiking, the lettuce wraps by a creek were a PERFECT enjoyment. When traveling home the unfinished trailmix and grapes were pulled out just to tie over until dinner and it WORKED! It was a great day and I was able to stay paleo without having to think about it. All it took was a quick min to plan and get organized! GREAT DAY…GREAT HIKE!

Spicy Stuffed Banana Peppers

 
Ingredients:
  • 8 Hot Banana Peppers, tops removed and seeded. Reserve 1 tablespoon of seeds for seasoning
  • 1 pound grass fed ground beef
  • 1/2 of a vidalia onion, finely chopped
  • 3 cloves garlic, minced
  • Salt and Pepper to taste
Process:
  1. Rinse banana peppers, and removed ends to seed them.
  2. Save 1 tablespoon of the hot pepper seeds to season the ground beef.
  3. On medium heat, brown the ground beef, adding the garlic, onion, salt, pepper, and hot banana pepper seeds.
  4. Once the meat is cooked, allow to cool.
  5. Preheat grill to medium-medium high heat.
  6. Carefully Stuff the hot peppers with the ground beef.
  7. Grill peppers 8-10 minutes, turning frequently.

Score: The athlete needs to count the number of rounds he/she gets per tabata set (20secs). Their score is the LOWEST number of reps completed. For Example if the rep total went like so:

1st set of Tabata: American Swings

1st rd 10 swings

2nd rd 12 swings

3rd rd 10 swings

4th rd 9 swings

5th rd 8 swings

6th rd 7 swings

7th rd 9 swings

8th rd 10 swings

Score = 7

 

Apply this same scoring/concept for Game Style Push Ups. Add the 2 scores together and you will have the athletes final score. They can use the 2min rest to record their 1st round of Tabata scoring on the white board.
