Krause Springs

On Sunday Rabah and myself drove out to Spicewoods to visit Krause Springs.

After exploring the beautiful and very zen butterfly garden we went to visit the springs. There was a “pool” and then if you walked further down, you could play in the natural spring. There were alot of people, kids and blow up rafts at the very small pool, therefore we headed down to the natural spring. While yes there were ALOT of people at that location too, we had fun exploring a little and taking pictures at a very cold waterfall. Please see review below!

Scenery: There was lots of lush greens and water as well as a beautiful butterfly garden (3/5)

Distance: It took less than an hour to get out there. (4/5)

Seclusion: There were ALOT of people there, and the guy said it wasn’t that crowded. We didn’t even try the pool, there were to many people. (1/5)

Activity: While even though there wasn’t hiking, there was rope swings and swimming of all sorts. (3/5)

Camping: Technically they have primitive camping, but from what we saw you were VERY close to your neighbors and could drive up to your site. (1/5)

This past Tuesday and for the next few Tuesday’s our 1pm Coaches Training will be held at Barton Springs….YES!!

Barton Springs Austin TexasThis is excellent not only because it is SUPER hot in Austin, Texas now, BUT it gets us practicing a skill we don’t get to practice that often, swimming…plus did I mention it is FUN and we get a tan! This past Tuesday we met on top of the hill on the grassy side with our kettlebells after a quick warm up, we went into:

Apera Bags

Before we left for regionals, each of the Crossfit Central teammates were given an Apera Bag with the double Cs embroider on the side. These bags are AWESOME! I quickly emptied my Reebok bag, given to me at the 2012 games and put everything in this bag. I thought for sure I was going to have to downsize, nope! The only thing that didn’t go was my cleats and that was by choice! This Performance Duffle Bag has A LOT of neat features. 1st there are a zillion pockets to hold EVERYTHING you could possibly thing of. The bag is durable and has antimicrobial product protection inside and outside. And an even more awesome perk, Apera will donate 1 bag to special olympics for every 3 bags they sell. What a GREAT cause!

This bag gets 2 thumbs up from me and worth EVERY penny you pay! Highly recommended!

Casa Muy Grande Plaintains

Casa Muy Grande Plaintains

Serves 2-4 | Prep 2 min. | Cook 10 min.

Ingredients:
2 ripe plaintains (The darker, the better.; do not use green ones for this recipe.)
1/4 cup water
1 tablespoon coconut oil or other cooking fat
lots of salt
pinch of ground cumin
1 fresh lime

Directions:

1. Peel the plantains. The easiest way is to cut off both ends, then make shallow slits along the ridges along the length of the plantain. Then you can pry off the skin. (Here’s a very detailed video. Good golly! It’s not brain surgery.)

2. Slice plantains into coins. If you’re fancy, cut them on the diagonal. I was not fancy.

3. Heat a large skillet over high heat. Place the plantain slices in the pan, add the water, and cover. The water should steam and soften the plantains. Keep an eye on it! When the water is evaporated, test a plantain and see if they’re almost soft. Yes? Proceed to step 4. No? Add a few more tablespoons water and continue to steam under tender.

4. When the plantains are tender, add the cooking fat to the pan and shake it around to distribute the oil under the plantain slices. Reduce heat to medium-high. Sprinkle the slices generously with salt and let the bottom side cook until browned, about 1-3 minutes. Flip the slices and cook the other side until golden, another minute or two.

5. Sprinkle a pinch of cumin over the slices, add more salt, then stir with a wooden spoon to coat each slice with spice and fat. Remove to a serving plate and squeeze fresh lime juice over the top.

Bonus Condiment: We’ve been enjoying Salsa Lizano on just about everything: bunless burgers, avocado and cabbage salad, plantains, ceviche. It include onions, carrots, cauliflower, cucumbers, and spices — but I  suspected it also includes non-paleo ingredients so Dave and I typed the ingredients list into translate.google.com. Hmmm…

water, sugar, iodized salt, vegetable concentrate, molasses, spices (with mustard and celery), modified corn starch (thickener), acetic acid (acidulant), Potassium Chloride, chile pepper, hydrolyzed vegetable protein, sodium benzoate (0.09%) as preservative. Treated with ionizing energy.

Another nutrition note: Plantains are a pretty dense source of carbs. I’m using them as post-workout fuel on vacation, but at home, they’re a once-in-a-while treat. For context, here’s how they stack up against sweet potatoes and bananas.

Sweet Potato, 1 cup baked: carbs 41g | sugar 13 g
Plantain, 1 cup sliced: carbs 48g | sugar 22 g
Banana, 1 cup sliced: carbs 34g | sugar 18 g
