This week, my clients menu includes:

Meal 1 Egg Scramble
Meal 2 Grilled Hawaiian BBQ Chicken In Foil
Meal 3 Strawberry Basil Chicken
Meal 4 Balsamic Glazed Steak Rolls
Meal 5 Slow Cooker Pork Carnitas
Meal 6 Butternut Squash Risotto

There are links to the foods above, BUT I took things to the grill this week for 2 of the foods…Meal 2 and 4 and they were delicious!

Meal 2: Grilled Hawaiian BBQ Chicken In Foil I prepped and let everything marinate overnight then put it in the foil and grilled it the next day and it turned out so good!

Meal 4: Balsamic Glazed Steak Rolls I also made these a day in advance and put them on the grill after the chicken dish. I used asparagus, zucchini squash (yellow and green), and peppers (red and green) No onions or mushrooms because most people don’t like them.

EXTRA: Almond Baked Chicken With Horseradish Honey Mustard Vinaigrette This one was my favorite from last week (maybe the week before). Cobb salads are my FAVORITE…like a good cobb-er…good greens, solid toppings…I was excited to make this for my clients/athletes and it turned out really well, the dressing (or dipping sauce) isn’t so bad either!
